Single use of bitcoin addresses and wallets

Dear all,
I've been following bitcoin for a couple of years, and there is one thing I still haven't been able to sort out clearly, that I would like to ask about today:
You can often read that a bitcoin address should be used only once for good privacy. But I've never seen a wallet making that easy. Of course, I haven't tried all wallets on the market, but would anyone in this forum know about a wallet which makes that thing seamless?
Like:
I declare all my BSV addresses in my wallet, it shows me only the total amount, and when I spend, it just takes BSV from enough addresses to reach the amount I want to send, creates a single transaction to take from all these chosen inputs, send to my recipient, and send what remains to a new address, and finally automatically adds that new address to my wallet.
Or maybe all wallets work like that and I haven't understood anything about wallets? (that would scare me a bit, though)
